What makes this dish extra special is how it combines simple ingredients to create a rich and flavorful dish that’s big on comfort. It’s the perfect way to bring people together around the table. Personally, I love making this on chilly nights when I need a dish that feels like a warm hug after a long day. And the best part? It’s easy to make, so you don’t have to spend hours in the kitchen to get this delightful meal on the table.

Ingredients

  • Potatoes (4 large, diced)
  • Olive oil (3 tablespoons)
  • Garlic powder (1 teaspoon)
  • Paprika (1 teaspoon)
  • Salt (1 teaspoon)
  • Pepper (½ teaspoon)
  • Boneless, skinless chicken breasts (1½ pounds, diced)
  • Buffalo sauce (⅓ cup, or adjust to taste)
  • Shredded cheddar cheese (1 cup)
  • Mozzarella cheese (1 cup)
  • Chopped green onions (for garnish)
  • Ranch dressing or blue cheese dressing (for serving, optional)

Instructions

Step 1: Preheat and Prep

Start by preheating your oven to 400°F (200°C). While the oven heats, wash and dice the potatoes into bite-sized chunks. Pat them dry with a paper towel to remove excess moisture—this helps them crisp up beautifully in the oven.

Step 2: Season the Potatoes

In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Make sure each piece is well-coated with the seasoning mix. Spread the potatoes evenly onto a greased or parchment-lined baking sheet in a single layer.

Step 3: Roast the Potatoes

Roast the potatoes in the preheated oven for about 25-30 minutes, or until they start to develop that golden-brown crust on the edges. Give them a toss halfway through to ensure even cooking.

Step 4: Add the Chicken

While the potatoes roast, dice the chicken breasts into small, bite-sized pieces. In the same bowl you used for the potatoes (no need to dirty another one!), toss the chicken with Buffalo sauce.

Once the potatoes are golden and crisp, take them out of the oven and layer the Buffalo chicken on top. Return the baking sheet to the oven and bake for another 15-20 minutes, or until the chicken is cooked through.

Step 5: Add the Cheese

Now for the best part—cheese! Sprinkle shredded cheddar and mozzarella evenly over the chicken and potatoes. Pop the baking sheet back in the oven for 5-7 minutes, or until the cheese melts into gooey perfection.

Step 6: Garnish and Serve

Once out of the oven, sprinkle chopped green onions over the top for a fresh burst of flavor. Serve it as is, or with a side of ranch or blue cheese dressing for dipping.

Notes

  • If you’re serving this for a party or game day, you can keep it warm in the oven at a low temperature until guests are ready to eat.
  • For a more veggie-packed version, consider adding chopped bell peppers or zucchini to the roasting pan during the final 20 minutes of cooking.
