Traditionally known as a homestyle favorite in the American Midwest, Cowboy Casserole brings together a mix of ground beef, creamy soup, tender veggies, melted cheese, and a golden crown of crispy tater tots. Growing up, this was the kind of dish that showed up at potlucks, church gatherings, and weeknight dinners when mom needed something quick, satisfying, and sure to be a hit. It’s easy to make, endlessly customizable, and absolutely packed with flavor. It’s also a great dish for feeding a crowd or prepping ahead—just one of the reasons it’s remained a family favorite through the years.

1 medium yellow onion, chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1/2 cup sour cream

1 cup shredded cheddar cheese

1 can (15 oz) whole kernel corn, drained

1/2 teaspoon salt

1/2 teaspoon black pepper

3 cups frozen tater tots

1/4 cup chopped turkey ham (optional)


Instructions

Step 1: Preheat and Prep
Start by preheating your oven to 375°F. Grab a 9×13-inch casserole dish and lightly grease it so nothing sticks.

Step 2: Brown the Beef
In a large skillet over medium heat, cook the ground beef until it starts to brown. Add in the chopped onion and garlic, sautéing until the beef is fully cooked and the onions are soft and golden. Drain any excess fat.

Little tip from my kitchen: If you like a bit of extra smokiness, you can toss in some chopped turkey ham here—adds just the right hint of savory depth without overpowering the dish.

Step 3: Mix It All Together
Stir in the cream of mushroom soup, sour cream, corn, salt, and pepper. Once everything is combined, fold in half of the shredded cheddar cheese. This is the creamy, dreamy base of your casserole—super rich and comforting.

Step 4: Assemble the Casserole
Pour the beef mixture into your prepared baking dish. Spread it out evenly with a spatula. Top the whole thing with a layer of frozen tater tots, arranging them in neat rows or scattering them like confetti—your call!

Pop the dish into your preheated oven and bake for 35–40 minutes, or until the tater tots are crisp and golden brown. Sprinkle the remaining cheese on top during the last 10 minutes of baking so it gets all melty and bubbly.

Notes

This dish is as forgiving as it is flavorful. You can double the recipe for a bigger crowd or divide it into two smaller pans—freeze one for later! It’s also easy to adjust based on what you have on hand. No sour cream? Try plain Greek yogurt. No corn? Mixed veggies work just fine.
