4 lobster tails (thawed if frozen)

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons butter

6 garlic cloves, minced

1 cup heavy cream

½ cup grated Parmesan cheese

1 tablespoon lemon juice

1 teaspoon Italian seasoning

1 tablespoon fresh parsley, chopped


Instructions

Step 1: Prep the Lobster Tails
Start by using kitchen scissors to cut down the center of each lobster tail shell, from top to tail, being careful not to cut the meat. Gently pull the meat out, resting it on top of the shell while keeping it attached at the base. This gives that beautiful “butterflied” look and allows the meat to cook evenly.

Step 2: Season to Perfection
Drizzle the lobster meat with olive oil and sprinkle it with paprika, salt, and pepper. This simple seasoning helps bring out the natural sweetness of the lobster, while the paprika adds a subtle warmth and color.

Step 3: Sear the Lobster Tails
Heat a large skillet over medium heat and melt 1 tablespoon of butter. Add the lobster tails, flesh side down, and sear for about 2-3 minutes until they begin to turn opaque and get a little golden crust. Flip and cook the other side for another 2-3 minutes. Remove and set aside.

Step 4: Make the Creamy Garlic Butter Sauce
In the same skillet, add the remaining butter and the minced garlic. Sauté until fragrant—just a minute or so. Then pour in the heavy cream, Parmesan cheese, lemon juice, and Italian seasoning. Stir and let the sauce simmer gently for 3-4 minutes, until it thickens slightly and the cheese is fully melted. The aroma at this point is going to be absolutely heavenly.

Step 5: Finish Cooking the Lobster
Return the lobster tails to the skillet, nestling them into the sauce. Spoon the sauce over the lobster to coat them generously. Let them simmer together for another 2-3 minutes, just enough for everything to come together and the lobster meat to be fully cooked.

Notes

If you’re working with frozen lobster tails, make sure to thaw them completely before starting. You can do this overnight in the fridge or by placing them in a sealed bag and submerging in cold water for about 30 minutes. Be gentle when handling the lobster meat—it’s delicate and cooks fast.
