  • 1 box yellow cake mix
  • 1 box lemon instant pudding mix
  • ⅓ cup lemon juice (freshly squeezed is best)
  • 2 large eggs
  • 1 tsp lemon zest

Instructions

  • Preheat the Oven
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  • Mix the Lemon Brownie Batter
    In a large mixing bowl, combine the yellow cake mix and lemon instant pudding mix. Stir in the lemon juice, eggs, and lemon zest until fully combined. The batter will be thick.
  • Bake the Brownies
    Spread the lemon brownie batter evenly into the prepared baking dish. Bake for 22-24 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be lightly golden. Avoid over-baking, as you want the brownies to stay soft and chewy.
  • Cool the Brownies
    Once baked, remove the brownies from the oven and allow them to cool completely in the pan before adding the glaze. Cooling is important to prevent the glaze from melting into the brownies.
  • Prepare the Lemon Glaze
    While the brownies are cooling, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and 1 tablespoon of lemon juice until smooth. If you prefer a thicker glaze, add more powdered sugar, 1 tablespoon at a time.
  • Glaze the Brownies
    Drizzle or spread the lemon glaze over the cooled brownies, allowing it to set for about 10-15 minutes. For an extra burst of lemon flavor, sprinkle a little lemon zest on top of the glaze.
  • Slice and Serve
    Once the glaze has set, slice the brownies into squares and enjoy!
