Instructions

Step 1: Prepare the Watermelon Mixture

Start by cutting a few fresh watermelon chunks and blending them until smooth. You’ll need 1/2 cup of watermelon puree—make sure to strain it to remove any excess liquid. Too much moisture can make the truffle mixture too soft to work with.

Step 2: Combine the Ingredients

In a large mixing bowl, combine the softened cream cheese, watermelon puree, powdered sugar, and vanilla extract. Stir until everything is well blended and smooth.

Gradually fold in the crushed graham crackers, stirring until a thick, dough-like consistency forms. If the mixture feels too soft, you can place it in the refrigerator for 10-15 minutes to firm up.

Step 3: Shape the Truffles

Using a small spoon or cookie scoop, portion out the mixture and roll it into bite-sized balls. If the mixture is sticky, lightly grease your hands or dust them with powdered sugar.

Place the rolled truffles on a parchment-lined baking sheet and freeze for about 20-30 minutes until they are firm. This helps them hold their shape when coated in chocolate.

Step 4: Melt the Chocolate

While the truffles are chilling, melt the white chocolate and coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring in between until the chocolate is smooth and glossy. Be careful not to overheat, as white chocolate can burn quickly.
