Ingredients
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon cayenne pepper (optional for extra spice)
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- Skewers (wooden or metal)
Instructions
In a medium-sized bowl, whisk together the olive oil, melted butter, minced garlic, lemon juice, smoked paprika, onion powder, cayenne pepper, black pepper, salt, oregano, and parsley. This marinade is what gives the shrimp its bold, zesty flavor.
Add the peeled and deveined shrimp to the bowl with the marinade. Toss gently to ensure each shrimp is well-coated. Cover and refrigerate for at least 15-20 minutes. If you have time, letting the shrimp marinate for up to an hour will enhance the flavor even more.
If using wooden skewers, soak them in water for about 20 minutes to prevent them from burning on the grill. Thread the marinated shrimp onto the skewers, making sure they are evenly spaced to allow for even cooking.
Preheat your grill to medium-high heat (about 375-400°F). Lightly oil the grates to prevent sticking. If you don’t have an outdoor grill, you can use a stovetop grill pan or even a broiler in your oven.
Place the shrimp skewers on the grill and cook for 2-3 minutes per side. Shrimp cook quickly, so keep an eye on them to prevent overcooking. They should turn pink and slightly opaque when done.
Remove the shrimp from the grill and brush them lightly with any remaining melted butter for extra flavor. Serve hot with lemon wedges, a side of rice, or a fresh salad.
Notes
- If you want an extra buttery finish, reserve a tablespoon of the melted butter mixture and brush it over the shrimp right before serving.
- Pair this dish with grilled vegetables, a fresh salad, or garlic butter rice for a complete meal.
- You can also use the same marinade for other seafood like scallops or fish fillets.
