Churro Cannoli


1 package (12-count) cannoli shells
1/2 cup granulated sugar
1 tablespoon ground cinnamon
8 ounces ricotta cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/4 cup mini chocolate chips
Powdered sugar for dusting

In a shallow dish, mix the granulated sugar and ground cinnamon for the churro coating.
Dip each cannoli shell into water to slightly dampen it, then roll it in the cinnamon-sugar mixture until coated on all sides. Set aside.
In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract until smooth and well combined.
Fold in the mini chocolate chips into the ricotta mixture.
Spoon the ricotta mixture into a piping bag fitted with a large star tip or simply use a ziplock bag with a corner snipped off.
Pipe the ricotta mixture into each cannoli shell, filling them from both ends.
Dust the filled cannoli with powdered sugar before serving.
