Egg Salad Sandwich

Classic Creamy Egg Salad Sandwich


6 large eggs
1/4 cup mayonnaise
1 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
8 slices of bread
Lettuce and tomato slices (optional)


Place the eggs in a saucepan and cover with water.
Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 9 minutes.
Drain the water and place the eggs in a bowl of ice water for a few minutes to cool.
Peel the eggs and chop them finely.
In a bowl, combine the chopped eggs, mayonnaise, mustard, salt, pepper, and paprika.
Spread the egg salad onto 4 slices of bread, add lettuce and tomato if desired, and top with the remaining slices of bread.
