Espresso Cheesecake

Velvet Coffee Kissed Cheesecake


1 1/2 cups graham cracker crumbs
1/3 cup melted butter
2 tablespoons sugar
1 cup semi-sweet chocolate chips
3 (8 oz) packages cream cheese, softened
1 cup sugar
3 large eggs
1/2 cup brewed espresso
1 teaspoon vanilla extract


Preheat your oven to 325 degrees and lightly grease a 9-inch springform pan.
Combine graham cracker crumbs, butter, and sugar and press into the bottom of the prepared pan.
Melt the chocolate chips and set aside to cool slightly.
In a large bowl, beat cream cheese until smooth and creamy. Gradually beat in sugar.
Beat in eggs, one at a time, beating well after each addition.
Blend in the melted chocolate, espresso, and vanilla until fully incorporated.
Pour the mixture over the crust in the pan.
Bake for 55 minutes. The center will still jiggle while the edges will be set.
Cool completely in the pan before refrigerating for at least 4 hours.
