Moo Shu Chicken

Asian-style Moo Shu Chicken with Stir-fried Veggies


2 chicken breasts, thinly sliced
3 eggs
2 green onions, chopped
1/2 cup of wood ear mushrooms
1/2 cup of bamboo shoots
1/2 cup of cabbage, thinly sliced
3 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon oyster sauce
2 tablespoons sesame oil
1 tablespoon minced garlic
8-10 tortillas


Beat the eggs and scramble them in a pan with a little oil. Set aside.
In the same pan, add the sesame oil and minced garlic. Add the thinly sliced chicken and cook until browned.
Add the green onions, mushrooms, bamboo shoots, and cabbage. Stir-fry for 3-5 minutes.
Add the scrambled eggs back into the pan.
Stir in the soy sauce, hoisin sauce, and oyster sauce. Mix well.
Warm the tortillas in a dry pan or microwave.
Spoon the chicken mixture onto the tortillas and roll them up like a burrito.
