1 1/2 cups shredded zucchini
1 cup corn kernels
2 cloves garlic, minced
1/4 cup onion, finely chopped
1/2 cup cheddar cheese, shredded
1/4 cup Parmesan cheese, grated
2 eggs
1/4 cup milk
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup oil, for frying
Sour cream for topping (optional)


In a large bowl combine zucchini, corn, garlic, onion, cheddar cheese, and Parmesan cheese.
In a separate bowl whisk together eggs and milk.
In another bowl mix together flour, baking powder, salt, and black pepper.
Mix the dry ingredients into the wet ingredients.
Mix the batter into the vegetable mixture until well combined.
Heat oil in a large skillet over medium heat.
Drop spoonfuls of batter into the hot oil.
Fry for about 3 minutes per side until golden brown.
