2 cups fresh cherries, pitted and halved
1/2 cup granulated sugar
2 tablespoons cornstarch
1/4 teaspoon almond extract
1 tablespoon lemon juice
1 refrigerated pie crust
1 egg, beaten (for egg wash)
Powdered sugar, for dusting

Directions:

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the cherries, granulated sugar, cornstarch, almond extract, and lemon juice. Stir until the cherries are evenly coated.
Roll out the pie crust on a lightly floured surface. Cut it into squares or rectangles of your desired size.
Spoon the cherry filling onto the center of each pie crust square or rectangle.
Fold the edges of the pie crust over the filling, creating a rustic, free-form shape.
Place the assembled cherry jamboree onto the prepared baking sheet.
Brush the edges of the pie crust with the beaten egg for a golden-brown finish.
Bake for 20-25 minutes, or until the crust is golden and the cherry filling is bubbling.
Remove from the oven and let the cherry jamboree cool slightly.
Dust with powdered sugar before serving.
