Easy Banana Cake

A Deliciously Moist and Flavorful Dessert

Ingredients:

For the Banana Cake:

1½ cups mashed bananas (about 4 ripe bananas)
2 tsp lemon juice
2½ cups all-purpose flour
1½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¼ cup vegetable oil
1¼ cups granulated sugar
½ cup packed light brown sugar
½ cup buttermilk
3 large eggs
1 tsp vanilla extract
For the Cream Cheese Frosting:

8 oz cream cheese, softened
¼ cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract

Directions:

Preheat your oven to 325°F (163°C). Grease and flour a 9×13 baking pan.
In a small bowl, mix mashed bananas with lemon juice and set aside.
In a medium bowl, mix flour, baking soda, and salt, set aside.
In a large bowl, cream butter, oil, granulated sugar, and brown sugar.
Beat in the eggs one at a time, then stir in the vanilla extract.
Mix in the flour mixture alternately with the buttermilk until just combined.
Fold in the banana mixture.
Pour batter into the prepared pan and smooth the top.
Bake for 1 hour or until a toothpick inserted into the center comes out clean.
For the frosting, cream the cream cheese and butter, add the powdered sugar and vanilla, beat until smooth.
Frost the cake once it has cooled.
