Mashed Potato Quesadilla

Ingredients:

4 large flour tortillas
2 cups leftover mashed potatoes
1 cup shredded cheddar cheese
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1/2 teaspoon garlic powder
Salt and pepper to taste
Sour cream and salsa for serving

Directions:

Preheat a large skillet or griddle over medium heat.
Lay a flour tortilla on a clean surface and spread half of the leftover mashed potatoes evenly over one half of the tortilla.
Sprinkle half of the shredded cheddar cheese, chopped green onions, and chopped fresh cilantro over the mashed potatoes.
Season with garlic powder, salt, and pepper to taste.
Fold the empty half of the tortilla over the fillings to create a half-moon shape.
Place the folded quesadilla onto the preheated skillet or griddle and cook for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy and the cheese is melted.
Repeat the process with the remaining ingredients to make the second quesadilla.
Once cooked, transfer the quesadillas to a cutting board and let them cool for a moment before cutting each one into wedges.
Serve the Delicious Mashed Potato Quesadilla with a dollop of sour cream and salsa on the side for dipping.
