Mexican Rice

Flavorful Fiesta-style Rice

Ingredients:

1 1/2 cups long-grain rice
1/4 cup oil (vegetable or canola oil)
1 teaspoon garlic, minced
1/4 medium onion, finely diced
1/4 cup tomato sauce, or 2 pureed tomatoes
2 cups chicken broth
1 teaspoon salt
3 whole carrots, diced
1/2 cup peas (frozen or fresh)
Directions:

Rinse the rice under cold water until the water runs clear. Set aside.
In a large saucepan, heat the oil over medium heat. Add the rice and cook, stirring constantly, until golden brown, about 10 minutes.
Add the garlic and onions to the pan and cook until the onions become translucent.
Stir in the tomato sauce, chicken broth, and salt, then bring to a boil.
Reduce the heat to low, cover, and simmer for 20-25 minutes.
Stir in the carrots and peas, then cover and cook for an additional 5 minutes or until all the liquid is absorbed and the rice is tender.
