2 lbs beef stew meat
Salt and pepper to taste
1/4 cup all-purpose flour
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 can (6 oz) tomato paste
4 cups beef broth
2 teaspoons dried rosemary
2 teaspoons dried thyme
3 large carrots, chopped
3 large potatoes, chopped
1 cup frozen peas
Directions:

Season the beef stew meat with salt and pepper, then toss in flour to coat.
Heat the olive oil in a large pot over medium heat. Add the coated beef and cook until browned on all sides. Remove the beef from the pot and set aside.
In the same pot, add the chopped onion and minced garlic. Cook until the onions are translucent.
Stir in the tomato paste, beef broth, rosemary, and thyme. Bring the mixture to a boil.
Return the browned beef to the pot. Reduce the heat to low, cover, and simmer for about 1 hour.
After an hour, add the chopped carrots and potatoes to the pot. Continue simmering for another hour or until the vegetables and beef are tender.
Stir in the frozen peas and cook until they are heated through.
