Italian-Style Parmesan-Encrusted Courgette
Ingredients:
3 medium zucchini
2 large eggs
1 cup grated Parmesan cheese
1 cup Italian breadcrumbs
1/2 teaspoon garlic powder
Salt and pepper to taste
Marinara sauce for dipping (optional)
Directions:
Preheat the oven to 400°F (200°C).
Slice the zucchini into half-inch thick rounds.
In a shallow bowl, whisk the eggs.
In another shallow bowl, combine the Parmesan cheese, breadcrumbs, and garlic powder.
Dip each zucchini slice in the egg mixture, then coat it in the breadcrumb mixture.
Arrange the zucchini slices in a single layer on a baking sheet.
Bake for 20-25 minutes, or until golden brown and crispy.
Serve hot with marinara sauce if desired.
