Ingredients

8 slices of bread
4 ounces cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 cup raspberry jam
2 large eggs
1/4 cup milk
1/2 teaspoon ground cinnamon
Butter, for cooking
Maple syrup, for serving
Fresh raspberries, for garnish

Directions

In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix well until smooth and creamy.
Spread raspberry jam on 4 slices of bread.
Spread the cream cheese mixture on the remaining 4 slices of bread.
Sandwich the slices together, with one jam-covered slice on top of a cream cheese-covered slice, to create 4 stuffed sandwiches.
In a shallow dish, whisk together the eggs, milk, and ground cinnamon until well combined.
Heat a large skillet or griddle over medium heat and melt a pat of butter.
Dip each stuffed sandwich into the egg mixture, coating both sides.
Place the soaked sandwiches onto the hot skillet and cook for 2-3 minutes on each side, or until golden brown and the filling is warm and gooey.
Remove from the skillet and serve immediately with maple syrup and fresh raspberries on top.
