Broccoli Rice Casserole Recipe

2 cups cooked white rice
3 cups broccoli florets, blanched and chopped
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1/2 cup sour cream
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon dried thyme
Salt and black pepper to taste
Optional: 1/2 cup breadcrumbs for topping
Optional: 2 tablespoons melted butter for topping


Preheat the oven to 350°F (175°C) and grease a casserole dish.
In a large bowl, combine the cooked rice, chopped broccoli, and shredded cheddar cheese.
In a separate bowl, mix together the mayonnaise, sour cream, chopped onion, minced garlic, dried thyme, salt, and black pepper.
Add the mayo-sour cream mixture to the rice and broccoli mixture. Mix well to combine.
Transfer the mixture to the greased casserole dish and spread it evenly.
If using breadcrumbs, combine them with melted butter and sprinkle the mixture over the casserole.
Bake in the preheated oven for about 25-30 minutes, or until the casserole is heated through and bubbly.
If desired, broil the top for an additional 2-3 minutes to achieve a golden crust.
Allow the casserole to cool slightly before serving.
