Ingredients:

2 cups chocolate cookie crumbs
1/2 cup unsalted butter, melted
3 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup mini chocolate chips
1 cup all-purpose flour

Directions:

Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan with non-stick cooking spray.
In a medium bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of the prepared springform pan to form the crust.
In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the granulated sugar and vanilla extract, and continue to beat until fully incorporated.
Beat in the eggs, one at a time, until each is well combined.
Fold in the mini chocolate chips and all-purpose flour, making sure they are evenly distributed in the batter.
Pour the cheesecake batter over the cookie crust in the springform pan.
Bake in the preheated oven for about 60-70 minutes or until the edges are set and the center is slightly jiggly.
Remove the cheesecake from the oven and let it cool to room temperature in the pan.
Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, to set before serving.
