3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups granulated sugar
1 teaspoon ground cinnamon
3 large eggs, beaten
1 cup vegetable oil
2 cups ripe peaches, peeled and diced
1 teaspoon vanilla extract

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a large mixing bowl, whisk together the all-purpose flour, baking soda, salt, sugar, and ground cinnamon until well combined.
In a separate bowl, mix the beaten eggs, vegetable oil, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, stirring just until the flour disappears.
Gently fold in the diced peaches, being careful not to overmix the batter.
Pour the batter into the prepared loaf pan, spreading it evenly.
Bake in the preheated oven for about 60-70 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
