1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
1/4 cup olive oil
1/4 cup lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
4 pita bread rounds
Sliced red onion, for serving
Sliced tomatoes, for serving
Fresh parsley, for serving


In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and black pepper. Mix well to create the marinade.
Place the chicken pieces in the marinade and toss to coat them evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight, to marinate the chicken.
Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
Grill the chicken skewers for 8 to 10 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
Warm the pita bread rounds on the grill for a minute on each side.
To serve, place a few pieces of grilled chicken on each warm pita bread round. Top with sliced red onion, sliced tomatoes, and fresh parsley. Fold the pita bread to create a pocket and enjoy!
