Ingredients:

1 1/2 cups sugar-free graham cracker crumbs
1/3 cup unsalted butter, melted
2 cups fresh strawberries, hulled and chopped
1 tablespoon lemon juice
2 cups cream cheese, softened (use a sugar-free version if available)
1 cup plain Greek yogurt
1/2 cup powdered erythritol (or your preferred sugar substitute)
1 teaspoon vanilla extract
1 envelope unflavored gelatin
2 tablespoons warm water
Sugar-free whipped cream and fresh strawberries, for garnish (optional)

Directions:

In a medium bowl, combine the sugar-free graham cracker crumbs and melted unsalted butter until the crumbs are evenly coated.
Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Place the pan in the refrigerator to chill while preparing the filling.
In a blender or food processor, puree the fresh strawberries with lemon juice until smooth. Set aside.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the plain Greek yogurt, powdered erythritol, and vanilla extract to the cream cheese, and continue to beat until well combined.
In a small bowl, sprinkle the unflavored gelatin over warm water and let it sit for a minute or two until it blooms.
Microwave the bloomed gelatin for about 10-15 seconds or until it becomes liquid. Stir the liquid gelatin into the cream cheese mixture until fully incorporated.
Fold in the strawberry puree into the cream cheese mixture until well combined.
Pour the strawberry cheesecake filling over the chilled crust in the springform pan.
Smooth the top with a spatula and refrigerate the cheesecake for at least 4 hours or until it sets.
Once the cheesecake is set, remove it from the pan and garnish with sugar-free whipped cream and fresh strawberries if desired.
