Using a cookie scoop or tablespoon, scoop out portions of dough and roll them into balls.

Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Flatten each dough ball slightly with the palm of your hand.

Bake the cookies in the preheated oven for 10-12 minutes, or until set and slightly firm to the touch.

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Make the Mascarpone Frosting:

In a mixing bowl, beat together the softened mascarpone cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.

Assemble the Cookies:

Once the cookies have cooled completely, spread a dollop of mascarpone frosting onto the flat side of each cookie.

Sandwich together with another cookie to form a cookie sandwich.

Dust with Cocoa Powder:

Dust the tops of the assembled cookie sandwiches with unsweetened cocoa powder using a fine-mesh sieve.

Serve and Enjoy:

Arrange the Tiramisu Cookies on a serving platter and serve immediately.

Enjoy the rich flavors of espresso, cocoa, and mascarpone in every delightful bite of these indulgent cookies!
