Philly Cheesesteak Quesadillas

Ingredients:

1 pound ribeye steak, thinly sliced
1 onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
4 large flour tortillas
2 cups shredded provolone cheese
2 tablespoons vegetable oil
Salt and pepper, to taste

Directions:

In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
Add the thinly sliced ribeye steak to the skillet and season with salt and pepper.
Cook the steak until browned and cooked through, approximately 3-4 minutes. Remove from the skillet and set aside.
In the same skillet, heat another tablespoon of vegetable oil.
Add the thinly sliced onion, green bell pepper, and red bell pepper to the skillet.
Sauté the vegetables until they are tender and slightly caramelized, approximately 5-7 minutes.
Remove the vegetables from the skillet and set aside.
Place a flour tortilla on a clean surface.
Sprinkle a quarter of the shredded provolone cheese evenly over one half of the tortilla.
Layer a quarter of the cooked steak and sautéed vegetables on top of the cheese.
Fold the tortilla in half to create a quesadilla.
Repeat steps 8-11 with the remaining tortillas and ingredients.
Heat a large skillet or griddle over medium heat.
Place the quesadillas in the skillet and cook until the tortillas are golden brown and crispy, and the cheese is melted, approximately 2-3 minutes per side.
Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges.
Serve the Philly Cheesesteak Quesadillas hot and enjoy!
