Raspberry Truffles

Decadent Dark Chocolate and Raspberry Delights

Ingredients:

2 cups dark chocolate, chopped
1 cup heavy cream
1/2 cup raspberry jam
1/2 cup unsweetened cocoa powder, for dusting

Directions:

Place the chopped chocolate in a heatproof bowl.
Heat the heavy cream in a small saucepan over medium heat until it begins to simmer.
Pour the hot cream over the chocolate and let sit for 2 minutes to melt the chocolate.
Stir until smooth and then mix in the raspberry jam.
Refrigerate the mixture for 2 hours, or until firm enough to shape.
Scoop the chocolate mixture and shape into small balls, then roll in the cocoa powder.
