Ingredients:

1 cup sweetened shredded coconut
1 cup crushed shortbread cookies
1/2 cup creamy caramel sauce
1/2 cup semisweet chocolate chips
1 tablespoon coconut oil
1/4 cup melted chocolate (for drizzling, optional)

Directions:

In a large mixing bowl, combine the sweetened shredded coconut and crushed shortbread cookies.
Pour in the creamy caramel sauce and mix until all the ingredients are well combined.
Using your hands, roll the mixture into bite-sized truffle balls and place them on a parchment-lined baking sheet. Freeze the truffles for about 30 minutes to set.
In a microwave-safe bowl, melt the semisweet chocolate chips and coconut oil in 30-second intervals, stirring after each interval, until smooth and melted.
Dip each chilled truffle into the melted chocolate, making sure it is fully coated. Return the coated truffles to the parchment-lined baking sheet.
If desired, drizzle the melted chocolate over the top of the coated truffles for an extra touch of sweetness.
Place the truffles back in the freezer for an additional 10 to 15 minutes to allow the chocolate coating to set.
Once the chocolate has hardened, transfer the Samoa Truffles to an airtight container and store them in the refrigerator until ready to serve.
