Baked Caprese Chicken

Italian Style Baked Caprese Chicken with Mozzarella and Tomatoes


4 boneless, skinless chicken breasts
Salt and pepper to taste
2 tablespoons olive oil
3 cloves garlic, minced
1 pint grape tomatoes, halved
10 large basil leaves, finely chopped
8 oz fresh buffalo mozzarella, sliced in 1/2 inch thick slices
Balsamic glaze for drizzling (optional)


Preheat oven to 375°F (190°C).
Season both sides of the chicken breasts with salt and pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat and sear chicken breasts until golden brown on both sides.
Remove the pan from heat but keep the chicken in the skillet. Layer each chicken breast with the minced garlic, halved grape tomatoes, chopped basil, and thick slices of mozzarella.
Place the skillet in the oven and bake until the chicken is cooked through and the cheese is bubbly and slightly browned (about 20 minutes). Drizzle with a balsamic glaze if desired.
