Tomato Basil Chicken

Hearty Chicken in a Fresh Tomato and Basil Sauce Recipe


4 chicken breasts
2 tablespoons olive oil
Salt and pepper to taste
1 cup cherry tomatoes, halved
3 garlic cloves, minced
1/4 cup fresh basil, chopped
1/2 cup chicken broth
1/4 cup balsamic vinegar
1/2 cup grated Parmesan cheese


Season the chicken breasts with salt and pepper.
Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides. Remove the chicken from the skillet and set aside.
In the same skillet, add the cherry tomatoes, garlic, and basil. Cook until the tomatoes start to soften.
Pour in the chicken broth and balsamic vinegar. Bring to a simmer.
Return the chicken to the skillet and sprinkle with the grated Parmesan cheese.
Cover and cook for 10-15 minutes, or until the chicken is cooked through and the cheese is melted.
