Zucchini Brownies

Ingredients:

1/2 cup unsweetened cocoa powder
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1/4 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 1/2 cups shredded zucchini
1/2 cup chopped walnuts (optional)

Directions:

Preheat the oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan.
In a medium bowl, whisk together the cocoa powder, all-purpose flour, baking soda, and salt. Set aside.
In a large mixing bowl, combine the granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the shredded zucchini and chopped walnuts (if using) until evenly distributed throughout the batter.
Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
