Ingredients You’ll Need:

  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup salsa
  • 6-8 small flour tortillas
  • 2 cups shredded Mexican blend cheese
  • Fresh cilantro, chopped (for garnish)
  • Sour cream and guacamole (for serving)

Preparation Steps:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add chopped onions and minced garlic to the skillet. Sauté until onions are translucent.
  4. Stir in taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Simmer for 5-7 minutes.
  5. Place a layer of tortillas at the bottom of the prepared baking dish, covering it completely.
  6. Spoon half of the beef mixture over the tortillas.
  7. Sprinkle a layer of shredded cheese over the beef mixture.
  8. Repeat the layers, finishing with a generous layer of cheese on top.
  9. Cover the casserole with aluminum foil and bake for 20-25 minutes.
  10. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  11. Let it rest for a few minutes before slicing.
  12. Garnish with chopped cilantro and serve with sour cream and guacamole on the side.
