Chow Chow (Old Fashioned)

Preparation Steps:

  1. In a large bowl, combine the chopped green tomatoes, shredded cabbage, diced bell peppers, chopped onions, diced cucumbers, and chopped green beans.
  2. Sprinkle kosher salt over the vegetables and toss to combine. Let the mixture sit for 2 hours, then drain excess liquid.
  3. In a large pot, combine white vinegar, granulated sugar, mustard seeds, celery seeds, ground turmeric, ground mustard, and red pepper flakes. Bring the mixture to a boil, stirring to dissolve the sugar.
  4. Add the drained vegetables to the pot, and simmer for 10-15 minutes until the vegetables are tender-crisp.
  5. Ladle the hot chow chow into sterilized jars, leaving about 1/2-inch headspace.
  6. Wipe the jar rims with a clean, damp cloth and place sterilized lids on the jars.
  7. Process the jars in a boiling water bath for 10 minutes to ensure they are properly sealed.
  8. Allow the jars to cool completely before storing in a cool, dark place.
